Let’s Do Lunch: Wish We Were Still On Vacation!

We’re back from a fantastic week on Kaua’i, which I’m convinced is paradise on earth. After anticipating the trip for more than a year, and the wonderful time we had with my parents-in-law, brother- and sister-in-law, and niece, it’s hard to come back to reality. Last week, I didn’t think about new recipes or blogging at all. I was too busy soaking up the sun, downing fruity cocktails, going to the beach with the boys, and — for one glorious day — ziplining!

As usual, vacation time passed way too quickly. We just got back yesterday morning, so I’m not quite into the swing of things just yet, but I made this easy-peasy lunch — packed in an Easylunchbox — for Johnny to give to the boys (they each have one) while I’m tutoring tomorrow.

I cut two fish shapes freehand (as if you couldn’t tell, haha) from tortillas, then spread them with peanut butter and jelly. Sounds gross, but my boys like “peanut butter and jelly quesadillas.” The fish are in “water,” aka blueberries. I also cut up a mango to remind them of the trip (they both loved the mangoes in Hawaii), and sliced up some strawberries to add color to the lunch.

I don’t usually post personal photos on this blog, but just this once, I’m going to share a few of my favorite images from vacation.

  1. So jealous of your vacation!!! Last time I was in hawaii was for my honeymoon. Wonder if I’ll ever be able to bring the 3 boys there. I want to try puka dogs!
    Can’t wait for your pound cake recipe. Tristan lives on pound cakes. He can eat a whole pound cake in one sitting.

  2. OMG, that look on D’s face with the ketchup–that could totally be my Jack.

    Now, about this pound cake thing. Pound cake is something very very near and dear to my heart, and the importance of The Perfect Pound Cake in my family goes back even farther than the whole pumpkin bread thing. I’m talking generations. I’m talking recipes on pieces of frail, yellowed paper with spindly but careful cursive writing that to my knowledge have never been photocopied, just handed down. Anyway, very much looking forward to your recipe!! πŸ˜‰

    • Thanks, Tracy! I just wrote you a couple of emails! πŸ™‚ Daiso is cheap in person, but sadly you can only order online from them in bulk. However, I do love allthingsforsale.com and jlist.com for bento supplies. A lot of what I use, though — the cookie cutters, the reusable muffin cups, the food markers — can be purchased on amazon or at craft stores. My favorite lunch boxes are the ones pictured here, the easy lunch boxes. If you go to my bento entries, every boldfaced word is a link that takes you to where you can buy that product. πŸ™‚
