Let’s Do Lunch: Egg Salad Pita Sandwich

Jack’s been digging hardboiled eggs lately, so today, I made him a simple egg salad (just mashed two eggs with some mayonnaise, a pinch of salt and a tiny dash of garlic powder) for lunch. He loves egg salad sandwiches, but complains that they’re too messy to eat, so I stuffed the egg salad into a pita pocket lined with romaine lettuce and packed it in one of my trusty EasyLunchboxes:

To add a cute springtime touch, I cut a small flower shape out of one side of the pita bread before lining it with lettuce and stuffing it with egg salad. I wedged some baby carrots next to the pita in the main compartment and placed the flower cutout on top of the carrots for fun. Goldfish and grapes round out the meal. By the way, only the top layer of grapes is neatly arranged. The bottom layer is rather haphazard. 🙂
