Jack was very excited yesterday about the first day of spring (they’re learning about the equinoxes in school, apparently), so I tried to give his lunch today a touch of springtime.
We had just enough homemade fried rice left over from dinner last night for Johnny and Jack’s lunches, so I packed Jack’s serving in a Thermos and topped it with flower-shaped red bell pepper, with little strips of celery and edamame halves as the stems and leaves. I also cut a little bird shape out of some yellow bell pepper. To round out the meal, I packed a container of apple chunks skewered on music-themed picks, with a little container of leftover caramel cheesecake dip for Jack to dip his apples in as a rare treat.
mmm… looks great! can you please post your fried rice recipe? i have been looking for a good one for our family and you always make stuff that taste so good. your the best!!!;)
