Fruit Rainbow

I know I just featured a rainbow fruit salad last week, but I couldn’t resist making this fruit rainbow for a playdate today. I saw it floating around Pinterest and thought it was so adorable, with the marshmallow clouds at one end and a “pot of gold” at the other.

This is pretty self-explanatory, so I won’t write up a detailed recipe. Cut appropriately-colored fruits (I used strawberries, clementine wedges, pineapple chunks, green grapes, blueberries and red grapes), arrange them in an arc, then put a small handful of mini marshmallows at the left end of the rainbow to form a “cloud,” and then place a small bowl of golden raisins at the right end of the rainbow for the “pot of gold.” Ideally, I would have had a wider plate and an opaque, small black bowl to use for the raisins, but I think it’s still pretty cute.

You can also use gold foil-wrapped chocolate coins, Rolos or Goldfish as the pot of gold, but given the marshmallows, I thought the golden raisins might be a healthier choice. 😉 Enjoy!
