Happy New Year, everyone! We had a terrific, busy holiday season, filled with fun family memories. My husband’s been home for the last two weeks, so the boys have had lots of fun playing with Daddy. I know today (the first day back at work and school) will be hard on everyone. To help cheer up Jack, I made him a special New Year lunch, packed in an EasyLunchbox.
In the lower half of the big compartment, we have a PB&J sandwich (with homemade strawberry jam). I cut the sandwich in half, placed one of the halves into the compartment, then cut “2012” from number cutters and placed those on top of the half sandwich. I used food markers to draw dots on the numbers. To fill out the rest of the compartment, I filled two silicone muffin cups with clementine orange wedges (with a little tomato in the center to make it look like a flower) and salami rounds (torn in half, then arranged in concentric circles). For those who are curious, there are four haphazardly placed clementine wedges underneath the nice top layer. I used 1 1/4 clementines (ate the remainder of the second one ;)).
The smallest compartment has two stacks of five mini pretzel twists each. The compartment in the bottom right-hand corner has raw sugar snap peas topped with a Babybel cheese. I used a star-shaped cookie cutter to cut a star shape out of the wax. It’s very easy — simply press down on the wax, then lift the cookie cutter. The wax will just come right out, and voila, you have a fancy-looking Babybel cheese that took about a second to make.
